Day 2- Coconut Banana Cheesecake

So I obviously make lots of cheesecakes but often it is the same kind over and over again.. So as a treat I decided to make Coconut Banana Cheesecake.. I sent it to work with dh so that he could share with his coworkers..


Ingredients:
2 pkgs cream cheese
1/2 cup sugar
1/2 cup cream of coconut (i used coconut milk)1/2 tsp vanilla
2 medium size bananas
2 eggs
1 prepared graham crust

Mix cream cheese, sugar, vanilla and cream of coconut in mixer until smooth. be sure to scrape down sides. Once smooth add in the bananas. I like to leave small chunks of bananas in mine for more flavour.. But you can mix it until smooth if you would like or puree it before adding it to the cream cheese mix.

Add eggs and mix only until blended. Scrape bowl and mix again for a minute or so.

Prepare a graham crust by mixing margarine with graham and adding a bit of sugar. I mix it right in the cake pan.

Pour the cream cheese mixture into the pan and bake at 350 for 25-35 minutes.. I usually set the clock for 20 minutes as sometimes it cooks quicker. I didn't use a water bath.
Remove from oven and place on cookie rack to cool. Be sure to run a knife around the edges so that when the cake cools it doesn't pull from the side and crack.. Once cool place in fridge overnight and than decorate. I decorated at 5am and would normally add whipped cream but dh used it all up so he had to settle for just coconut on top.. BORING but dh's fault. :)Verdict: although I didn't taste it , I was told that it was really good.. The flavour was perfect and the cheesecake itself wasn't overly sweet.. :)

So, I'm confused. . .why is the name Coconut Banana Cheesecake when there is no banana listed? did I miss something? We love bananas here :)

thank you Mandy.. I totally forgot to type in bananas.. The recipe that I used was only for a coconut cheesecake so when I was typing it up I forgot the bananas.. thanks again.. :)
